Ingredients

For the crust:

  • 2 eggs
  • 9 tablespoons sugar (powdered)
  • 9 tablespoons vegetable oil
  • 9 tablespoons milk
  • 12 tablespoons flour

For the curd cream:

  • 500-600 g cottage cheese

How to cook:

For the crust: beat the eggs and salt until the mixture turns white and doubles in volume. Add powdered sugar, vanilla essence, vegetable oil and milk, then flour mixed with baking powder. We will get a thicker mixture than sour cream (like for a cupcake).

Pour half the mixture into a mold (20/30 cm) covered with parchment paper and bake in a preheated oven at 180 degrees (150 degrees for an electric oven) for 10-15 minutes until the cake hardens.

Add soda to the kefir, stir vigorously and leave so that there is time for the reaction to take place; the soda must be “quenched” by the acid contained in the kefir.

Separately mix granulated sugar with a raw egg, grind this mass and pour in kefir. Add flour, stirring constantly, to obtain a thin dough. Pour it into a mold that has been previously greased and sprinkled with flour. Place the mold in the oven at 200 degrees for 20 minutes.

  • 2 cups of flour;
  • 125 gr. baking margarine or butter;
  • 1.5 cups sugar;
  • 2 eggs;
  • 200 gr. cottage cheese;
  • 100 gr. sour cream;
  • 3 apples;
  • optional vanillin or cinnamon.

For the base of the pie, sift the flour, mix it with granulated sugar (half a glass) and baking powder. Add margarine, cut into small pieces, and chop the mass with a knife. We ended up with a crumbly mass.

We clean the apples, removing the seeds and hard plates of the seed pods. If the skin is rough (this happens with winter varieties of fruits), then it is better to peel it too. Grate the fruit or chop it finely.

Pour in the strained lemon juice little by little. Add flour and baking powder. The result is a soft dough that barely holds its shape. Don't try to add more flour; the base of the pie will be tough. Refrigerate the dough, wrapping it in film.

Place the berries on a sieve so that they defrost and the juice drains from them. Combine cottage cheese with starch and vanillin, add sour cream and sugar.

We take out the dough, which has had time to cool well; after refrigeration it has become thicker and tougher. It should be distributed over the mold (form diameter 22-24 cm) so as to form sides. It is better to spread it with your hands, as the dough does not roll out well.

    In the meantime, you can do the filling. Take a large bunch of different greens and chop finely. I took mint, parsley, dill, basil and spinach. We also chop the garlic finely and mix with herbs.

    Add all this to the cottage cheese, add salt and mix. It is better to take grainy cottage cheese, it is drier and its taste will be better felt in the pie.

    The dough came up and raised its cap. Now you can knead the dough.

    Add the egg and the rest of the flour, and then pour in the vegetable oil. The dough turns out liquid, like pancakes.

    We cover it again and let it rise again. This happens quite quickly, in 20-30 minutes.

    Cover a small baking sheet with parchment.

    Pour in about half of the dough and spread it evenly with a spatula. Place the filling of cottage cheese and herbs on top.

    Pour the remaining dough over the filling and smooth it out.

    Place our pie in the oven, preheated to 180 degrees for 30 minutes.

There is definitely no more cozy and homely aroma than the mixture of apple, cinnamon and baking. This very spice - cinnamon - directly smells of home, travel, and ancient India at the same time. Yes, this is possible! In fact, you won’t find a more convenient and correct combination, like apples and cinnamon, for home baking - the apartment immediately smells like some kind of German confectionery or bakery. We're daydreaming, but ahead of us is jellied pie with cottage cheese! The aroma is not all of its advantages - the cake is also airy, it is also with apples and, of course, cinnamon!

Pies that are baked with a batter are often called jellied, but let’s not forget that the filling can also be filled. Right now we have just such a recipe, in which the top layer of the pie will be poured. Forward!

Products for dough

  • calculation of ingredients - for 8 servings;
  • Prep time according to recipe – about 1 hour 20 minutes;
  • granulated sugar - 100 g;
  • low-fat cottage cheese – 100 g;
  • butter (highly chilled) – 100 g;
  • wheat flour (premium grade) – 200 g;
  • baking powder – 1 teaspoon;
  • salt – 1/4 teaspoon.

Products for filling

  • Fresh apples – 5 pieces;
  • Granulated sugar – 2 tablespoons;
  • Butter – 1 tablespoon;
  • Ground cinnamon – 1 teaspoon.

Products for filling

  • sour cream 20% fat – 150 g;
  • chicken eggs – 2 pieces;
  • granulated sugar – 1 tablespoon;
  • potato starch – 2 tablespoons;
  • vanilla sugar - 1 small bag.

Optional but nice ingredients

  • nuts (walnuts, almonds, hazelnuts, even cashews or a mixture of different types are suitable) – 100 g;
  • berries (currants, cranberries, raspberries, cherries are suitable) – 50 g;
  • powdered sugar – 2 tablespoons.

Preparing curd dough

Step #1. Cut very cold butter into small pieces.

Step #2. Mix flour with baking powder and add to butter.

Step #3. If you have very grainy cottage cheese, grind it through a sieve with sugar and salt. In order not to waste time and effort on this, it is preferable to use low-fat cottage cheese in this recipe - it is not grainy in advance.

Step #4. Add the curd mass to the flour and butter and mix vigorously.

Step #5. Beat the eggs in a separate bowl and add the resulting fluffy mass to the dough.

Step #6. Knead the dough properly. It turns out quite strong and sticky, as it should be according to the recipe with cottage cheese.

Step #7. Roll the dough into a ball and wrap it in cling film or a towel soaked in cold water.

Step No. 8. Place the dough ball in the refrigerator.

Let's make the apple part of the filling.

Step #1. Let's deal with the apples first - wash them, peel them from the core. The peel can also be removed, or you can leave it - at your discretion.

Step #2. We cut the apples with a sharp knife into beautiful and even slices.

Step #3. Melt butter in a saucepan.

Step #4. Add apples to the butter, sprinkle with sugar, simmer slightly, but not too much - so that they retain their shape and structure.

Let's make the sour cream part of the filling

Step #1. Beat the whites into a fluffy, strong foam.

Step #2. Separately from the whites, grind the yolks with sugar until white.

Step #3. Mix sour cream with vanilla sugar, then add the protein mixture, stirring gently with a whisk or fork, then the yolk mixture, also carefully.

Step #4. Lastly, add starch and mix until smooth.

Let's start making the pie

Step #1. Take a round medium mold (preferably a detachable one) and grease it thoroughly with oil.

Step #2. Roll out the dough with a rolling pin into a layer no thinner than half a centimeter.

Step #3. We line the mold with dough and form the sides - they should be about three centimeters high.

Step #4. Place cooled apple slices on the dough in beautiful rows and sprinkle them generously with cinnamon.

Step #5. We send the partially assembled pie to an oven preheated to 180 degrees. For 10 minutes!

Step #6. During these 10 minutes we prepare the decoration. You can take only nuts (some particular type) or use assorted ones. Grind the nuts in a mortar until they form coarse crumbs, or forget about the nuts and take berries. Frozen berries must first be thawed and all the juice allowed to drain.

Step #7. We take the pie out of the oven. The dough should, as they say, set. Pour sour cream mixture over the apples, sprinkle nuts or berries on top, or don’t decorate with anything at all - leaving the charm that is already there.

Step No. 8. Increase the oven temperature to 200 degrees and place the pie there for 20-25 minutes.

Step #9. Remove the cake, let it cool slightly, and sprinkle the top with powdered sugar to decorate.

Step #10. When the cake has cooled sufficiently, remove it from the pan and divide it into portions.

Will it work in a slow cooker?

Of course it will work! The algorithm will remain the same, but it will probably be more difficult to remove than from a springform mold. This should be done only after the cottage cheese pie has cooled completely.

For preparation, we will give the following advice: bake the dough with apples separately in the “baking” mode for 15-20 minutes, and only then (together with the filling part) – in the same mode for 30-35 minutes.
